There are two answers, since there are two various words like that:

1. Americans are mostly christian, and many of them believe that they cannot say the words "Jesus Christ" for any unserious reason. The same about their word "God".

So they came up with many names to replace that. Like you (Italian??) would say "Mamma mia" in a situation of surprise or shock, they usually would say "Jesus" or "Oh God" or so.

But since THAT what forbidden, they said something else instead, and some examples are here:

"golly" or "gosh" are replacements for "God"

"Gee" is for "Jesus".

Maybe they thought they would "burn in hell" or so when they "call out their Lord's name in vain" (or so, chuckle).

Oh, and the second answer is this:

Ghee is clarified butter in the indian cuisine.

Gee was originally a contraction of Jesus Christ in spoken language. It was used by the younger generation so they would not be accused of blasphemy.
The original meaning is not known by most who use it now days.
Other things have been added such as GEE WIZZ.

Modern useage could be polite exclamation or indifference

It could be some kind of modified primal sound, like ahh, or ow. Notice in most languages when they need a pause they say ummm, or uh.

i think Janey P is thinking of "ghee"

when ppl say, "gee" it's usually short for "Jesus," but the meaning is more like, "wow"
