Yes, if it went through a special salting preparation. I don't know the procedure, but it requires salt and garlic, and it takes several days. It tastes good.

~*~Eating raw pork of any kind is dangerous. Bacon has been cured by either smoke (more and more rare these days) or by chemical treatment to give it its flavor. But the danger is in something called trichinellosis, also called trichinosis. It is caused by eating raw or undercooked meat of animals infected with the larvae of a species of worm called Trichinella. Infection occurs commonly in certain wild carnivorous (meat-eating) animals but may also occur in domestic pigs.

This is why pork of any kind should be fully cooked and bacon (despite some belief to the contrary) is not cooked before it is packaged and sold.

I wouldn't suggest it because there is a disease called trichinellosis that is caused by eating raw or infected meat infected by some type of worm called a Trichinella. Just to be safe, I wouldn't do it. Plus, bacon tastes better cooked, right?

In the US and most developed nations, raw pork is likely fairly safe to eat because good sanitation and meat inspection make the likelihood of trichinosis virtually nonexistant, but you still need to worry about E. coli and other bacteria.

The real question for most people is why you would want to easy something as unappealing as cold fat.

Yeah, but why ? Ugh !
According to Alton Brown from the food channel, you don't have
to worry about pork products being well done as in the past
because Trichinosis is basically a thing of the past with modern
processing.

Can it be? Yes. Should it be? No. The consumption of raw pork is an excellent way to meet new people in the medical field and test the limits of your medical insurance.

Since pigs are fed better food these days than they used to be, raw bacon is *probably* safe for human consumption -- but I don't recommend it. Bacon is about two-thirds fat, and uncooked fat is very hard to digest -- it may do unpleasant things to your bowels.
