Colour is irrelevant. Crisp, crunchy, sweet/slightly sharp are the best. I'm thinking Braeburn, Cox and Green/Red Delicious.

You can only ever eat green ones!!! don't you remember that the wicked stepmother gave a juicy red apple to Snow White. So stop eating that right now!

During the fall, I make it a point to eat one or two apples a day. I live in upstate NY...apple country, and there are two wonderful family owned farm markets a couple miles up the road from me. Homemade pies, flowers, fresh produce, and such a variety of apples!
Red is my favorite, and at the moment, it's the Honey Crisp apple..VERY CRUNCHY...and still juicy. Macoun is my second favorite!

I used to only eat really green Granny Smiths but they seem to have changed over the years, maybe the supermarkets get them from Greece now or something; now I like the sweet dessert apples which are just turning red on one side :)

Gravenstein!!!

Sun washed Sonoma County Summer and Early Autumn. The air is crisp and clear, and the orchards are bearing their fabulous, winey, tart and crisp apple, the Granvenstein. Not much to look at, with little brown spots, yellow with a ting of red, but what unforgettable flavor. Gravensteins make great juice, are good cooking apples, and great out of hand eating. Getting them however is a neat trick. They are available predominately on the West Coast, however, occasionally a savvy produce buyer will get them in for you if you request them. They do not keep well in cold storage, and again, aren't as pretty as say a Golden Delicious, but they do blow the door handles off of the pretty blond of the Apple world.

Apples come in various grades: Extra Fancy, Fancy, and No.1. The top two grades of apples are based on exterior appearance and size. Apples should be stored at 31ºF to 32ºF at 85-90% relative humidity. Keep them in their boxes as they can absorb odors, and they give off ethylene gas that can hasten ripening in other fruits and vegetables.. One medium apple equals one cup diced apples.

For eating raw, green Granny Smith apples or reddish gold Honey Crisps, but Pink Lady is a close third. For baking and fall menu main dishes, I go with Macintosh, Jonigolds and Braeburns.

Definitely green apples. Laxton's Superb if obtainable otherwise a Cox's Orange Pippin. Sadly as supermarkets now dictate to growers, I often have to settle for the less sharp Braeburn which, I will grudgingly admit is a reasonable compromise.
