are you using red potatoes or white ones? you get a little different flavor with each. both are good roasted though. if you are making a roast at the same time, i like to cut them into pieces and roast them directly in the pan with the meat, since them they absorb the flavor of the meat and the seasonings you put on it...add in some sliced onion and pieces of carrot, too. if you are not, then cut them into pieces, drizzle them with some olive oil or other type, and season them as you wish...for basic...use salt and pepper, then add other stuff according to your tastes...ideas: onion powder or garlic salt, or Hidden Valley ranch dressing mix (the powdered stuff you can get in the envelopes or in a big jar at Sam's Club)...or you could add on some rosemary or thyme, or some dill. put them single layer on a cookie sheet or some other pan, and cook them at 350-400 degrees, turning once, til they pierce easily with a fork (inside will be as soft as the inside of a french fry or baked potato) and are the desired golden brown roasted yummy looking things that you want. enjoy.

Cut them in 1 inch cubes with skin on. Put in a large bowl and add a couple of tablespoons of extra virgin olive oil. Add a couple of garlic cloves(mince), 1-2tsp basil, oregano, black pepper, cumin and salt to taste. mix together with spoon or hand until all potato is evenly coated and then pour out on a aluminum covered cookie sheet or roasting pan and place in a preheated oven at 400 degrees for 40 minutes. Give the potatoes a flip after 25 minutes then check for fork tender at 40. let them go at 5 to 10 minute intervals until fork tender. It varies depending on the amount of potatoes you are roasting. Two pounds and less should be about 40 minutes. You can speed the process by par boiling the potatoes before seasoning for about 4-6 minutes. Strain and pat dry before adding E.V.O.O. and seasonings and you can cut roasting time in half. If you like it spicy, add a tsp of crushed red pepper or a dash or two of cayenne pepper

I like to dice them, about one inch size, peeled or unpeeled, toss in a bowl with a little extra virgin olive oil and sprinkle with sea or kosher salt and pepper, then spread out on a baking sheet and bake in a hot ~ 400 degree oven until they're crisp on the outside and tender on the inside, maybe 30 minutes. Delicious! Good with sweet potatoes too, or a mixture of the two.

Take about 2-3 lbs. of new potatoes. Wash, donot peel. Quarter them, or halve them if small. On a large cookie sheet w/ sides, toss them w/ about 1/3-1/2 cup olive oil, a four-finger pinch of kosher salt, and ground black pepper to tate. You can toss in a rosemary spring or two of you like this flavor. Toss well, spread evenly. Bake in a preheated 400ºF oven for about 30-40 minutes, depending upon size. Use spatula to remove from the baking sheet.

Just clean them up and leave the skins on and roast them in
the same pan with some chicken and a couple of carrots. If they
are small leave them alone and if they are bigger, cut them into
reasonable chunks so they dont take all day to cook. Turn them once in a while to wet them with the chicken fat and Before
taking them out - put your oven on broil to crisp them up.
Sprinkle them with salt and pepper and anything else that you
like, but take it easy, not to overdue it.

I place mine in micro w/skin on, until half done. . can be sliced at
this point when cool, or placed in fridge and sliced or cubed another day. Any kind of potato will work.

Place in bowl, drizzle with olive oil, garlic salt, pepper if you like, a
alot of fresh rosemary.

Place in hot oven 450degrees. until browned in a large pan, so the potatoes do not overlap. I generally cube them. GREAT!!

I take my potatoes and cover them in olive oil, I then coat them with Montreal steak seasoning and wrap them in tightly in foil. I then bake as normal.

Or take red skin potatoes and sautee them in butter, garlic salt and rosemary until they are well coated, them put the entire pan in the oven covered... When they are done, stir and leave in the oven uncovered for 10 minutes.
