We slice it in half, boil until fork tender, drain the water out, let it cool, use the fork to scoop it out, drain it again, then we put marinara sauce and mozzarella cheese on top! It is YUMMY! like spaghetti without the carbs!

Cut it in half lengthwise with a strong heavy butcher knife or cleaver. Scrape out guts and seed using a regular soup spoon. Place in a microwave safe dish with about an inch of water in dish and cover with saran wrap leaving one corner open for venting. cook on high for 6 to 8 minutes, depending on size. I just did a 4 pound one at 6 minute in a 1300 watt microwave 2 days ago and it came out perfect. Pull plastic off and be careful of steam. take out of dish and using a fork, rake out the meat of the squash. It will come loose in strands resembling spaghetti noodles. You can use it at that point just like the pasta it resembles, or you can toss it with some butter or heart smart butter substitute and some brown sugar and nutmeg or cinnamon. If you want, it can also be added to stir fry's. It is a fairly bland squash so it will take on the flavor of what ever you choose to use it with. I think it is one of the most versatile in the squash family.

I placed a tiny little bit of butter on the squash. conceal, and bake until eventually comfortable. I then prefer to place some shredded mozzarella cheese on it.

Cut it in half long wise -
Rub the inside with butter or olive oil - salt and pepper.
Roast for about 1/2 hour in a 375 degree oven.
Scrape the insides with a fork after it cools a little to make "Spaghetti" strands.

My boyfriend's parents grow this on their farm (along with tons of other fresh veggies) Take squash & slice in half length wise. Scoop out seeds & rinse. Place in baking dish & add 1/2 stick butter & 2 cloves garlic minced to each half. Bake @ 350 for 30 - 40 minutes or til squash starts to separate into "spagetti" strands. Scoop out & serve with fresh ground pepper. Goes great with grilled pork.....
