CRAW FISH ETOUFFEE

1 c. each chopped onion & green pepper
1/2 c. chopped celery
2 cloves garlic, minced
1/4 c. butter
1 lb. (2 1/2 c.) peeled, cooked craw fish tails
1 (10 3/4 oz.) can condensed cream of celery soup
1/2 c. chicken broth
1/2 tsp. hot pepper sauce
1/4 c. snipped fresh parsley
1 tsp. salt
1/8 tsp. each ground black pepper, green pepper, red pepper
3 c. hot, cooked rice

Cook onions, green pepper, celery and garlic in butter in large skillet over medium high heat until tender crisp, about 3 to 4 minutes. Stir in remaining ingredients except rice. Simmer, uncovered 10 to 15 minutes. Serve over hot rice.

CRAWFISH FETTUCINI

1 1/2 c. butter
2 onions
2 bell peppers
1/4 c. all-purpose flour
4 tbsp. dehydrated parsley
3 lbs. crawfish tails, boiled and peeled
1 pt. Half & Half cream
1 lb. Velveeta
2 tsp. jalapeno relish
Salt, garlic powder and black pepper, to taste
1 lb. fettucini noodles
Parmesan cheese

Saute onion and bell peppers. Add flour. Cover and cook 15 minutes, stirring frequently. Add parsley and crawfish tails. Cook 15 minutes, stirring frequently. Add cream cheese, relish, garlic, salt and pepper. Cover and cook on low for 30 minutes. Cook fettucini. Add noodles to crawfish mixture and mix well. Sprinkle with parmesan and bake at 350 degrees 15 to 20 minutes until heated through.

PS- It is fattening

Serve with some mayonnaise or tartar sauce....
or
Make a paella and put them on top a few minutes before serving...
Or
Make a Shrimp Gumbo, and put them in at the last minute to warm up...

Serve them on a bed of crushed ice with a nice rulaun(spelling?) sauce or cocktail sauce. You could also add them to a nice pot of Seafood Gumbo or Jambalya just long enough before sreving to bring up their temperature.

TWell we serve our with red potato's and corn on the cob! Normally boil it all together or each boil corn on the cob and red potato together add a little crab boil it's very Delicious. That's how we do here down south.

with melted butter and maybe some lemon or lime juice sounds good to me.
