The ingredients sound odd, but once baked, it has a sweet somewhat BBQ taste.

1 whole cut up chicken
1 bottle Russian dressing
1 envelope onion soup mix
1 can whole cranberry sauce

Wash chicken and put in oblong pan.
Mix remaining 3 ingredients and pour over chicken.
Bake at 350 for 1 hour.

Serve over rice or noodles.

I use Italian bread crumbs (I sometimes buy, sometimes make my own) and blend them with canned jalapenos (use the juice too). I use an egg/milk wash on the chicken and then dredge it in the bread crumbs (press it in if necessary) to coat it evenly. I fry it in vegetable oil with just a little bit of lard for flavor. You can make a fruit salsa to go with it or a cheese sauce...

I also take chicken and cut it into cubes, saute it in peanut oil with garlic... cover... When chicken is almost cooked, add carrots, broccoli, bok choy... Use rice wine vinegar to hydrate the mix... When almost done, add soy sauce... add peanut butter to chicken juice in the pan and sprinkle in cayenne pepper or asian chile paste to taste... Makes a great peanut chicken.

CHICKEN MARSALA - In first frying pan, Cut boneless chicken into chunks or strips, coat with flour and cook in butter until all sides just start to brown, set aside. In second frying pan, melt butter and add fresh sliced mushrooms (lots) and cook until they just start to soften, add generous amount of Marsala wine and a couple of finely diced garlic cloves and cook for three minutes. Add chicken from first pan and cook until sauce thickens (flour from chicken will thicken sauce), Add a small spritz more Marsala wine ( to refresh Marsala wine flavor) and serve immediately.
