What is the history behind this practice?

To offset the absorption of carbohydrates by adding the protein content from the egg. Hence, less storage of the carbohydrates as fat in the abdominal area.

lunch, that is as straight forward as it gets. many times you know you need something to eat and eggs are very nutritious. It is the same reason why rum with milk and egg as an eggnogg. some food and some drink. It goes down easy and beats a cold greasy Messy burger.
