**I highly recommend making these with the micro bacon tray as suggested in the recipe (buy one for 4 bucks at Wal-Mart). You are less likely to have them stick. I've been meaning to try these with some dry packaged ranch dressing mix next time to see how they taste. Also, I would suggest thoroughly rinsing the potato slices and patting them dry before cooking otherwise you get a very strong starch taste. **
Microwave Potato Chips
These potato chips are very easy to make in the microwave. Also, they are healthier for you as they are not cooked in any oils. This method has intrigued so many people that have tasted them and then made them for themselves. The younger people just love them.
4 medium potatoes (russet, yellow gold or red potatoes)
Spices or herbs, such as granulated garlic powder, seasoning salt, cayenne, dried dill weed or anything else you can come up with
If potatoes are old, peel and slice thin, 1/16" in thickness, slicing across the potato. If the potatoes are new or good skins, DO NOT PEEL, just scrub well, then slice them 1/16" in thickness, slicing across the potato.
Sprinkle with your choice of spices or herbs or just leave them plain.
If you have a microwave bacon tray, place the sliced potatoes flat on the tray in a single layer. Cover with a microwaveable, round heavy plastic cover.
Microwave on HIGH (full power) for 7 to 8 minutes. Cooking time could vary slightly, depending on the wattage of your microwave. You do not have to turn the sliced potatoes over.
If you do not have a bacon tray, use a microwave safe casserole dish. Rub the inside of the dish with some olive oil for the first batch of potato chips. I do not know why, but I find that if you do not rub oil the first time, some chips will tend to stick to the dish. After the first batch is done, you do not have to rub the dish again.
Continue to microwave the remainder of sliced potatoes as noted above.

Instructions
1. Preheat oven to 350ºF. Lightly coat a rimmed baking sheet with cooking spray.
2. Spread chickpeas on baking sheet and sprinkle with garlic powder and red pepper; toss to coat.
3. Roast on bottom rack of oven, shaking pan about every 15 minutes, until browned and crunchy, about 45 to 50 minutes. Cool before serving. Yields about 1/2 cup per serving.

The potato chip recipe really rocks. You could also use sweet potatoes. Awesome twist.
Make your own hummus... Roast a whole head of garlic in a 350 oven for about 35 min. The cloves will become sweet & soft as butter.
In a food processor, blend a can of chick peas, the juice of 2 lemons, 1 tsp. of salt, 1 Tbsp. of tahini (sesame paste), all the cloves out of the roasted garlic head, (COOLED, just squeeze the head upside down & the cloves will pour out), 1/2 tsp. of cayenne pepper.
As the hummus is processing, add approx. 1/2 C of Extra Virgin Olive Oil in a thin stream. When blended, refrigerate for about 30 min. Serve w/ pita chips, cuke slices, etc. It looks really pretty if you sprinkle some fresh chopped FLAT parsley over the top before serving. :)

These cookies are really good. I especially like to make them this time of year. You can basically use any kind of apple and any kind of granola.
Apple Cereal Cookies
1 cup margarine
1 cup white sugar
1 cup brown sugar
2 eggs
1 1/2 cup whole wheat flour
1 1/2 cup white flour
1 teaspoon salt
1 teaspoon soda
1 teaspoon cinnamon
1/4 teaspoon cloves
1/4 teaspoon allspice
1 cup raisins
1 cup peeled, grated apple
1 cup granola
1 cup oatmeal
Cream butter with sugars. Add eggs, one at a time. Combine the flour and dry ingredients and add to creamed mixture. Add fruits and cereals, mixing well. Drop by tablespoon full on greased cookie sheet. Bake 350 degrees for 15 minutes. Makes about 6 dozen.

Low-fat yogurt is always good. I like to cut up a watermelon & a cantaloupe, throw in a few handfuls of red and green grapes, and add some strawberries for a beautiful fruit salad.
You can get 100 calorie packs of microwave popcorn, also popcorn cakes in cheddar or caramel. Air-popped popcorn is low--spray with butter spray & salt or use seasoned salt.
Slice cukes and cherry tomatoes, & eat plain or drizzled with fat free Italian dressing. Sugar free jello and cool whip free make a nice parfait.

Crab 'n' Brie Strudel Slices
1/2 pound fresh crabmeat
6 ounces Brie or Camembert cheese, rind removed and cut into 1/4-inch cubes
2-1/2 cups finely chopped peeled ripe pears
1/2 cup thinly sliced green onions
1/2 cup diced fully cooked ham
2 teaspoons lemon juice
1 garlic clove, minced
Dash pepper
14 sheets phyllo dough (14 inches x 9 inches)
3/4 cup butter, melted
DIRECTIONS
In a large bowl, combine the first eight ingredients; set aside.
Place a piece of plastic wrap larger than a sheet of phyllo on a work surface. Place one phyllo sheet on plastic wrap; brush with butter. (Keep remaining phyllo covered until ready to use.) Repeat six times. Spread half of crab filling to within 1 in. of edges. Fold the two short sides over filling. Using the plastic wrap to lift one long side, roll up jelly-roll style.
Transfer to a greased 15-in. x 10-in. x 1-in. baking pan; discard plastic wrap. Brush top with butter; score top lightly at 1-in. intervals. Repeat with remaining phyllo, butter and filling.
Bake at 375° for 20-25 minutes or until golden brown. Let stand for 5 minutes. Cut into slices along scored lines. Yield: 2 dozen.

try baby carrot with peanut butter, celery sticks with cream cheese you can try the fat free sour cream.. to keep carrots and celery from drying out you can keep the in a zip lock baggie with a little bit of water in it..( I dont like it when the carrot starts to turn white) all kinds of different veggies, you can make ranch dressing using fat free or lowfat milk same with the mayonaise..these are things my family likes to munch on..hope this helps at all...you can also try dried fruits.. I also like dried mango with fatfree plain yogurt..the mango give the yogurt the sugar it is lacking enjoy eatting healthy

You could make your own trail mix and put it in individual snack bags. Mix your favorite dried fruits and nuts and maybe toss in some small crackers or coconut.
