I'm cooking for someone tomorrow night who just dropped the bombshell that they can't have dairy or any flour products. I'm planning to do something with chicken and hopefully broccoli or zuccini but I don't want to just make a boring baked chicken. If you know of any sauces that don't require milk, that would be great.

This would be good for a casserole combining the two - chicken and broccoli, and maybe some rice - or couscous!

Alfredo Sauce

1/2 cup fat free soy milk
1/2 cup water
2 cloves garlic
1 teaspoon Italian seasoning
1 teaspoon Bill's Best Chik'nish Seasoning (or other vegetarian broth mix)
1/4 teaspoon salt (optional)
black pepper -- to taste
2 tsp. cornstarch -- MIXED WITH
2 tablespoons water

Combine soy milk, garlic, water, seasonings, and broth mix in small saucepan over medium heat. When it reaches a boil, add the cornstarch/water mixture, stirring constantly until thickened. Serve immediately.

I also cannot have wheat so I know what situation you are in. I have found chicken in walnut and garlic sauce
You need
12 teaspoons of olive oil
6 heaped tablespoons of roughly chopped walnuts
6 heaped tablespoons of chopped parsley
6 plump cloves of garlic, peeled and crushed
plenty of salt and freshly ground black pepper
Place all the ingredients into a food processor and whiz briefly into a sauce. Spread over the chicken and bake in oven for 40 minutes until golden and cooked through
Serve with hot potatoes or rice to soak up the juices

a yummy fruit salad that has everything that you like.
Mine has: watermelon, cantaloupe, honeydew, green and red grapes, pieces of apple, pineapple, raspberrys, blackberries. I forget what else I put in... I'm reminded when I see whats available at the market.
Also, steamed chicken recipe: giant pot, colander inside or steamer, 4 cups of water over medium heat with 1/2 cup of soy sauce. Add the fresh or frozen.. whole or parts chicken. cover... (watch for loss of water that will ruin pot) it will take about 2-3 hours to steam the chicken. When it's done, and open the lid... it WILL smell nasty! but the chicken will be delicately flavored with salt and be falling off the bone. I serve it with rice that had sauteed onions added to it. And whatever veggie for color. Simple and delicious AND easy to make.

There are loads of recipies, to many to mention & long to write out. However heres a quick easy recipe for stuffed peppers.

Ingriedents
2 red peppers - 8oz minced beef-1onion (chopped)-handful of chopped mushrooms- can of chopped tomatoes- 1 chicken or veg stock cube- 1/2 or 1 teaspoon of chilli powder- 1/2 glass of red wine (optional) 1/2 pint of water 1/4 pint if adding wine.

1brown mince in pan and add onions
2 add chopped musrooms & tinned tomatoes
3 add stock cube water & wine
4sprinkle over with chilli powder
Cook on a slow heat for around one hour.

5 Cut the tops of the peppers and take out the seeds inside.
6 stuff the peppers with the mince
6 place on a tray & cook in the oven for 30mins

serve with, rice or potato wedges or salad
"If your really hungry have all three"

Simple easy recipe that can't go wrong hope you enjoy !!!!

This is a good one.

RICE AND CHICKEN PILAF WITH DRIED CURRANTS AND TOASTED ALMONDS

1 tablespoon olive oil
1 onion, cut into wedges
12 ounces skinless boneless chicken (thighs or breasts) cut into strips
1 garlic clove, minced
1 1/2 cups white rice
1/4 cup dried currants
2 cinnamon sticks, broken in half
4 cups chicken broth
2 tablespoons sliced almonds, toasted

Heat oil in heavy large deep skillet (preferably nonstick) over medium-high heat. Add onion and sauté until golden, about 5 minutes. Sprinkle chicken with salt and pepper. Add chicken and garlic to skillet; sauté until chicken is no longer pink, about 4 minutes. Stir in rice, currants, and cinnamon sticks. Add broth and bring to boil. Reduce heat to low; cover and cook until rice is tender and most liquid is absorbed, about 20 minutes. Season with salt and pepper. Transfer to bowl. Discard cinnamon. Sprinkle with almonds.
