After you clean it and trim the artichoke steam it over: 1 Can Chicken Broth, 1 cup white wine, 1 1/2 teaspoons garlic, 1 teaspoon Italian seasoning, 1 bay leaf, 1 slice of onion. The artichoke is done when you can stick a fork into the bottom with very little resistance. Melt some butter with some fresh lemon juice and dip the tips of the leaves and the heart.

All you need to do is chop off the tops. Here are three easy ways to cook them:
1.Boil artichokes in salted water 20 to 45 minutes, until artichokes are tender.
2.Alternatively, steam artichokes for 15 to 30 minutes, or until tender.
3.As another option, microwave artichokes, individually wrapped in plastic, for 8 to 15 minutes
Drain the water and allow to cool.
Dip the "meat" in butter or vinaigrette. When its thoroughly plucked, scoop out the "hairs" to reveal the heart. Dip pieces of the heart into your dressing

---Artichoke Bottoms---
If dried, they must be soaked, then stewed in weak gravy, and served with or without forcemeat in each. Or they may be boiled in milk, and served with cream sauce; or added to ragouts, French pies, etc.
---To Dress Artichokes---
Trim a few of the outside leaves off, and cut the stalk even. If young, half an hour will boil them. They are better for being gathered two or three days, first. Serve them with melted butter, in as many small cups as there are Artichokes, to help with each.

---To keep Artichokes for the Winter---
Artichoke bottoms, slowly dried, should be kept in paper bags.

---Artichokes à la Barigoule---
Trim some small Artichokes, and with the handle of an iron tablespoon scoop out all the fibrous part inside, Put about a pound of clean hog's-lard into a frying-pan on the fire, and when quite hot, fry the bottom of the Artichokes in it for about 3 minutes; then turn them upside down, and fry the tips of the leaves also, drain them upon a cloth to absorb all the grease, and fill them with a similar preparation to that directed for tomatoes a la Provencale; tie them up with a string, and place them in a large stewpan or fricaudeaupan; moisten with a little good stock; put the lid on; place them in the oven to simmer for about an hour; remove the strings, fill the centre of each Artichoke with some Italian sauce; dish them up with some of the sauce, and serve.

---Artichokes à la Lyonnaise---
Pull off the lower leaves without damaging the bottoms of the Artichokes, which must be turned smooth with a sharp knife; cut the Artichokes into quarters, remove the fibrous parts, trim them neatly, and parboil them in water with a little salt. Then put them in a saucepan on a slow fire to simmer very gently for about three-quarters of an hour, taking care that they do not burn; when done they should be of a deep yellow colour and nicely glazed. Dish them up in the form of a dome, showing the bottom of the Artichokes only; remove any leaves that may have broken off in the sautapan; add a spoonful of brown gravy or sauce, 2 pats of butter and some lemon-juice, simmer this over the fire, stirring it meanwhile with a spoon; and when the butter has been mixed in with the sauce, pour it over the Artichokes, and serve.

cut top of artichoke leaves. put a bit of oil over artichokes. then cover top of artichoke with a mix of bread crumbs, choped herbs, garlic, extra virgin olive oil. put artichoke in a dish with a bit of oil at the bottom of it and about an inch or two of water. cook in oven for about an 1-1:30 hour. how to eat? peel leaves and suck them until u get to the heart, then remove the "hairy" part of the heart and eat heart....

or u can just boil them until tender and suck leaves and eat heart

You need to cook it first. The easiest way is to steam it and then scrape the stuff off of each leaf with your teeth, throw away the spiny stuff in the middle and eat the gooey part (heart) at the bottom. My grandmother always made a "stuffing" of Parmesan cheese, bread crumbs, salt, pepper and oregano and tucked it in between each leaf, then drizzled it with oil before steaming. Yummy!!
The baby artichokes you can steam/boil and eat whole.

Well i would'nt eat it raw. I steam mine first to cook them then use italian breadcrumbs and just stuff them around the leaves mix the breadcrumbs w/garlic butter then i bake them at 350 for about an hour. You tear the leaves of and eat the part of the leaves that arn't pointed you get to the middle and you have an artichoke heart. I also have extra garlic butter to dip them in. Soooo gooood.......Flo

you peel off the leaves of the artichokes and u the bottom of the leaf you pull the meat of the artichoke off with your teeth artichokes are delicous.
