i live in the UK and i havent had the luck to stumble upon monterey jack cheese. and the bourbon.... to use in recipes coz i try not to use liquor in my cooking. thanks:)

Ordinary Kraft cheddar or any good softer style cheddar. You can buy brandy essence at most supermarkets. Don't forget, though that cooking destroys any alcohol content in liquor & just leaves the flavor

The alcohol evaporates during cooking, so all you need is the flavor of the liquor.

Unfortunately I don't know what you would buy in the UK to substitute those two flavors.

Sorry, I guess my answer isn't much help.

for jack cheese....probably any mild white, medium body cheese would substitute.....a "farmer's" cheese

as for the brandy...if you use a dry vermouth as a base for sauces, you will get a wine-ish flavor and the advantage is that the vermouth won't go "bad" once openned...like a bottle of wine would...as far brandy...cognac...but without the alcohol...tough one there are alcohol free wines available but I'm not sure of an appropriate substitute for brandy....if you boil it down/simmer it for 8-10 min....most of the alcohol will boil off

Mild cheddar should be available to you, & a good substitute as well. You can use flavorings instead of liquor, however, all of the alcohol will evaporate toot sweet.
