Add cooked, chopped egg whites to this:
Yogurt Salad Dressing
1 - 8 ounce container plain low-fat yogurt
• 2 teaspoons lemon juice
• 1 teaspoon Dijon-style prepared mustard
• 1 teaspoon chopped fresh parsley
• 1 teaspoon chopped fresh chives
In a small bowl, beat together yogurt and lemon juice until smooth. Stir in mustard, parsley, and chives. Refrigerate until ready to serve.

You make it exactly like a regular egg salad except you leave out the yolks and instead of mayo you can use yogurt or cream cheese or which ever you like

3 egg whites
1 celery stalk
2 slices whole grain bread
sliced tomato
1 cup shredded carrots
1/2 cup black beans
1 TBS light mayonnaise
1. Add approximately 4 cups of water to a pot, with 3 eggs, and bring to a boil. Once water boils, cook eggs for 12 minutes.
2. Remove pot from stove and carefully pour water into sink, leaving eggs behind.
3. Immediately place eggs into ice water.
4. Once cooled, peel the shells and separate the whites from the yolks. Be careful, these will be hot.
5. Add hardboiled egg whites to bowl, mix with low-fat mayonnaise, and chopped celery stalk.
6. Add to bread and top with sliced tomato

Obviously, you leave the yolks out. I would imagine they are using a mayo-substitute. There are several brands you can buy at health food stores. Spectrum is a brand I have seen. You could check their website. Then you would just add some mustard, pickle, herbs. I'm sure it's delicious.

Here's a recipe you might like:
FESTIVE BLACK-EYED PEA SALAD
Serves 6-8
2 (151/2 oz.) cans black-eyed peas, rinsed and drained
1 cup white rice, steamed
2 green onions with bulbs and stems, chopped
1 small yellow pepper, chopped
1 (2 oz.) jar pimentos, rinsed and drained
3 hard-cooked egg whites, chopped
1/2 cup Italian dressing
Combine all ingredients and toss well.
Cover and chill at least 5 hours before serving, or serve hot.

Seperate the egg yolks and whites. Then boil the white only until hard and then cool and grate
