Outer shell is hard for protection. Many seeds can not mature until they are scarified by passing through the digestive system of animals.
Cotyledons are 2 leafed in their initial emergent stage. The fleshy "leaves" contain extra sugars and chlorophyl used by the newly emerged plant until true leaves begin to emerge from the plant.

The hard outer coating is a seed coat to protect the developing embryo of the next plant generation within.

Cotyledons are the embryonic leaves in a seed. May contain one or two in an angiosperm ~ flowering plant.
