Part of what makes ice cream scoopable - and Ice is not - is the churning action that ice cream receives in the freezing process. If you simply mix (and cook) the correct ingredients, and put it in your freezer, you will get less volume and it will be hard and icy. It will still taste nice, but wont seem like the ice cream you are familiar with

Ice shards will form. The constant movement keeps the ice crystals small but just making it and freezing the mixture will give you a hard frozen mixture.

if you don't stir often enough, and have a place to keep the rock salt from getting into the cream mixute, you'll end up with a salty ice cube

you will still get icecream but it will have larger crystals of ice in it. so it wont be smooth and creamy. but the flavor will still be good.
but the earth will cease to exist. so i don't recommend it.
