i only need 1 teaspoon do i really need that ingrediant?

Yes you MUST use it or a substatute. It is a levening agent and is what makes the cookie rise. Without it you will have a flat thin mess that isn't very tasty. If you have baking powder you can use it instead. Baking powder to soda ratio is 4 to 1 so use 1/4 the amount of powder hence 1/4 teaspoon. Enjoy!

It's very hard. I'm sure there is a substitute but I have no idea what it could be. The baking soda causes a special chemical reaction that creates the consistence of your cookie. If you don't use it, your cookie will probably be flat and hard.

substitue baking powder; which baking soda and tartar
you can go without, but your cookies won't rise and will be tough

yes. I tried it once and it crumbled and the taste was not right. Also dont substitute it with baking powder either.
