What foods would make a large hearty breakfast (I can't think of anything besides bacon)?

A large breakfast casserole? Biscuits and sausage gravy? Chicken fried steak with gravy? Hashbrowns and cheese? Eggs? More sausage? Stuffed omelets? Fruit, OJ, Bloody Marys? Cinnamon rolls, bagels and cream cheese?

a 3 egg omelet with diced ham & onions would be a hearty breakfast if wanting it to last you for the day. Or sausage gravy over hashbrowns would do it too.

biscuits and gravy, and it is very filling too...and you could have sausage or bacon with that....it will go a long way and you all will have had enough to eat....i did this when i had large crowds for breakfast....

steak and eggs, biscutes and gravy, quishe, oatmeal or grits, pancakes. Anything with alot of wheat in it is going to "stick to your ribs". I find that breakfast that are higher in protien tend to keep me satisfied longer and give me more energy. Steak and eggs is my favorite, as I can usually even skip lunch and not run out of energy before dinner.

try sausage gravy over biscuits ...fried or scrambled eggs...sausage, bacon, hashbrowns....or if you like "grits" (big in the south....orange juice, milk, coffee...you can always have waffles topped with sliced apples, cinnamon, walnuts or pecans and syrup....sprinkle with cinnamon...tastes great....that is a heavy breakfast....

scrambled eggs bacon and sausage and ham with toast and / or pancakes smothered in maple syrup and a nice big bowl of homemade grits smothered in butter with salt and pepper to taste.UMMMMMM GOOD!!!!

Cottage Cheese Scramble



Ingredients:
1/3 cup instant nonfat dry milk
1/4 cup water
3 eggs
1/2 cup cottage cheese
1/2 tsp salt
- dash of pepper
2 Tbsp butter
1 Tbsp chopped chives






Instructions:
Blend together nonfat dry milk, water, eggs, cottage cheese, salt, pepper and chives. In medium- size skillet melt butter; when hot, add egg mixture and cook over low heat until set. Serve immediately.


Breakfast Apple-Citrus Compote



Ingredients:
2 cups peeled and sliced tart apples (about 2 medium)
1 1/2 cups (about 9-ozs.) pitted prunes
1 1/2 cups orange juice
2 Tbsp honey
1 Tbsp lemon juice
1/2 tsp cinnamon
2 naval oranges, peeled and cut into segments
2 pink grapefruit peeled and cut into segments
- mint sprigs for garnish




Instructions:
In 2 to 3 quart saucepan combine apples, prunes, and orange juice; bring to boil, reduce heat and simmer until apples are tender but not soft, about 10 minutes. Remove from heat; stir in honey, juice and cinnamon. Cool, cover, and chill. Stri in oranges and grapefruit. To serve, spoon fruits with their liquid into serving dishes; garnish with mint sprigs.


Cheesy Sausage Strata



Ingredients:
1/2 pound pork sausage
1/2 pound Mozzarella cheese, grated
2 cups leftover bread cubes
4 eggs
1 1/2 cups milk
1/2 teaspoon salt (optional)
1/4 teaspoon pepper
1/8 teaspoon nutmeg


Instructions:
Grease a 10-inch deep-dish pie plate or a 9-inch square baking
dish. Brown & crumble sausage in a large skillet; set aside.
Spread bread over bottom of dish, top with sausage and grated
cheese. Beat together remaining ingredients and pour over cheese
and sausage. Bake at 350 degrees F. for 45 minutes, until
lightly browned. Let stand 10 minutes before cutting. Makes 8
servings.



French Toast



Ingredients:
4 eggs
1/2 cup instant nonfat dry milk
1 cup water
1/2 tsp salt
1 Tbsp granulated sugar
6 slices bread (medium thickness*)
2 Tbsp butter
- Confectioner's sugar




Instructions:
In a small bowl beat eggs, nonfat dry milk, water, salt and sugar until smooth and blended. Lay slices of bread in a flat baking dish. Pour mixture over bread, turn to coat evenly; cover; refrigerate overnight. Next morning melt butter in skillet. Saute until golden brown; turn on other side. Add more butter if needed. Serve with syrup.

*Raisin bread makes an interesting variation.


Sunday Scrambled Eggs



Ingredients:
6 large eggs
1/4 cup evaporated milk, undiluted
1/4 tsp salt
1/8 tsp pepper
1 Tbsp butter



Instructions:
In a small bowl, beat eggs, evaporated milk, salt and pepper with a fork until well broken up. Choose a nonstick skillet that measures 7 to 8 inches across the bottom. Add butter and heat over moderated heat. Whe butter is melted, pour in egg mixture. Cook 3 to 5 minutes, drawing a plastic spatula slowly across the bottom of the skillt, letting the uncooked egg flow under the cooked part, until eggs are set almost as much as you like them. Remove pan from heat.
Suggestion: Serve with sliced tomatoes or grilled tomato halves and grits or home-fries.
