It's not the blood that's meant for God, only the aroma. You can read the specific instructions for sacrifice in Leviticus. First of all, all sacrifices had to be done at the Temple in a specific manner. All the blood is drained from the little critter before it was placed on the altar where it was BBQ'd for God. The aroma was for God, the food was for the priests and their families. Sacrifices were replaced by prayer after the destruction of the 2nd Temple when the designated place was no longer available.

Blood was what leaked out of you when you were hurt and if enough leaked out then you died. It was therefore thought to be liquid life.
Remember we are talking about a time before technology and science. They were drawing their conclusions from their basic observations without in-depth explorations of the mechanical meaning behind them.
Does it not make sense that blood was sacred? Does the sight of their own blood not upset a child who has no knowledge of medicine and the workings of internal anatomy yet?

I think it has more to do with the innocence of the one whose blood was spilled than the blood itself. Like Jesus was suppose to be sinless... Occults allegedly like to use the blood of virgins... etc. The idea is that someone innocent died in place of the guilty.
