I am German-Spanish decent, I converted to Islam, would I be accepted by Muslims?

of course you would man, look at the entire balkan peninsula(bosnians, albanians that have been decimated by the serbs)
islam is a universal religion, most muslims arent even arab

Asalamaleikum! Welcome brother. My husband is Turkish (So def European) I am Mixed (English, Hispanic, Chinese, Nigerian) so mixed with European. Islam sees no race nor color!
