Since i upgraded to an enclosed litter tray my moggy sleeps/hides inside. - as well as using it as a toilet. is this normal?

There's nothing wrong, it's just weird. My male cat did the same thing once and a while, usually when he's scared.
He doesn't do this anymore now that he found a better spot to hide in with some luggage in a closet. Not much you can do just do you best to keep it overly clean. Feel free to take him out and put him somewhere else that might be more suitable for hiding also.

I agree with others, create an alternative place where your cat can hide out and make it it's own place. It really is not normal for a cat to be sleeping in/on their toilet. Typically, a cat that is doing that is ill but I think in your case it coincides with the litter hood introduction so yours is probably okay healthwise.

Cats like an enclosed place to go, maybe a box under the bed. They love large paper bags, just open it and lay it on the floor.

I'm sure it is. He/she probably thinks the liter box is a bed b/c of the enclosed sides.

Cats usually stay away from the litter box, other than to "litter" in there - does she have anywhere else to go fpr privacy? It must just feel cozy to her... her spot.

maybe your or cat is pregnant and she cant find any were else to have her babies or maybe he or he just doesn't want to go any where else and feels like its safe there or maybe its just not feeling well and feels as if it needs to stay there for a while i don't know maybe you should take it to see the vet that's a reasonable chose right i mean i would if i don't know whats going on with it

I agree w/leezard.....maybe you could get her one of those cat beds to make her feel like she has her own place to snuggle...I had one for my cat & she loves it.
