flour does have a shelf life and does go bad. I'm fortunate to bake a lot and flour doesn't sit long enough to go bad.

It looks like flour keeps for a long time, but you actually shouldn't keep flour for more than three months. And always freeze your flour for 24 hours before using it. All flour contains bugs called weevils that, if not frozen, can lay eggs in your kitchen and spread. They are tiny black specks, and once in your kitchen, very hard to get rid of.
