COTTAGE CHEESE PANCAKES

Ingredients:-

-1 cup cottage cheese or ricotta
-4 eggs, beaten
-1/2 cup flour, sifted
-6 tablespoons butter, melted
-1/2 teaspoon vanilla
-1/4 teaspoon salt

Method:-

1) Using a potato masher or hand mixer, mix cottage cheese or ricotta with other ingredients.
2) Heat a griddle or frying pan.
3) Melt a pinch of butter on the surface of the pan and swirl around to coat evenly, or alternatively, use a paper towel dampened with vegetable oil to wipe the hot pan down.
4) Spoon the mixed batter onto the hot surface, creating pancakes 3 inch diameter pancakes.
5) Turn only once to cook both sides evenly.
6) Serve with fruit in its own syrup (such as strawberries, blueberries, peaches or pineapple), or top with applesauce, fruit jam or maple syrup along with a pat of butter.

Kids like fast food, so why not give it to them at home and try to stop them from eating outside? There are a lot of sandwich varieties you could make using nutritious vegetables!
So the next time your kids ask for snacks, don't give them those oily parathas or poha! Try making brown bread sandwiches with fresh vegetables. They not only interest kids but also preserve the nutrients in the veggies because of no cooking used. As for noodles, try cooking them first in very less oil, and then adding the veggies.
Don't habituate kids to eat too much oily (even if it's home-made) or spicy(even if it is Indian) or salty.

Small kids must have a balanced diet, this includes meat and poultry. As a vegetarian I must say that I stop eating meat when I was around 18-19 Y.O. So I believe that you must include some meat into your childrens diet so they can grow and develope nice and strong. I know it's not your best answer, but from a vegan to another is just an advise.

If your small kids are eating cooked meals, they can eat the same food as you eat, the trick is to find out what they do not like or care eg. some spices, mainly the amount.

Once you establish that then take out the appropriate portion of the food for them and then add those spices for you,or adjust your taste to theirs and slowly increase it again.

Something I used to make for my kids when they were little and money was very tight, was tiny seashell pasta mixed with a bit of butter and soy sauce, they still talk about the seashell noo noo's to this day and they're almost grown LOL

SWEET CORN FRITTERS

1 can sweet corn cream
1 egg
1/2 c. self-rising flour
1 tbsp. sugar
1 tsp. cinnamon

Mix all ingredients and spoon in medium hot oil until brown. Put on double paper towel to absorb all the oil. Serve hot

POTATO CHEESE PIE

3 lb. red potatoes, peeled & quartered
2 garlic cloves (1 lg. clove), cut up in quarters
3/4 bar of butter
Little less than 1/2 c. Parmesan cheese
1/2 c. half & half
2 eggs
1 sm. onion, chopped
Salt & pepper
1 c. Cheddar cheese (1/4 of a pound), grated
2 tbsp. Parmesan cheese
2 tbsp. bread crumbs
2 tbsp. butter, cut in pieces

Butter a glass pie dish. Put potatoes and garlic (cut into 4 pieces if large) in water and bring to a boil, until potatoes are tender. Drain. Shake over heat until potatoes are dry. Mash potatoes, garlic and 3/4 a bar of butter. Add 1/2 cup (little less) of Parmesan cheese, half & half, eggs, salt, and pepper. Mash. Add onions. Spoon mixture in pie dish (1/2). Spread evenly. Cover with Cheddar cheese. Top with rest of potato mixture. Sprinkle 3 tablespoons of Parmesan cheese and bread crumbs and dot with butter. Bake at 350 degrees for 45 minutes.

STUFFED BAKED SWEET POTATOES

8 med.-sized sweet potatoes
1/4 c. orange juice
3 tbsp. butter, melted
1/4 tsp. salt
1/4 tsp. ground cinnamon
1 tsp. brown sugar

Heat oven to 350 degrees. Rinse and dry sweet potatoes well. Place potatoes on a baking sheet and bake 55 to 60 minutes or until tender. DON'T turn off oven. Cool potatoes until easy to handle.

When potatoes are cool, cut potatoes in half lengthwise and with spoon scoop out pulp from 8 halves and put into large bowl. Discard skins. Scoop out pulp from remaining 8 potato halves, leaving 1/4 inch potatoes intact to make the shells.

With electric mixer, beat potato-pulp, orange juice, 2 tablespoons butter, cinnamon and salt until smooth. Place potato mixture back into the saved potato shells.

Sprinkle remaining 1 tablespoon butter and the brown sugar over top of stuffed potatoes. Bake 10 to 15 minutes until potatoes are heated.

DEVILED EGGS

6 eggs
1/4 tsp prepared mustard
1/8 tsp dill
3 tbsp mayonnaise
1/8 tsp white pepper
1/8 tsp paprika
1/8 tsp salt
1-2 tsp milk

Place eggs in a pan and cover with water. Boil eggs for about 4 minutes.

Remove from heat and place in ice water. Let cool down to room temperature.

Peel under cold running water. Slice eggs in half. Place egg whites on a plate or serving tray rinsed and dried.

Mash egg yolks with a fork and add all ingredients except for paprika.

If desired, you can add more mayonnaise with a little bit of milk (small amounts at a time, as you can always add but not take out or you'll end up boiling another egg or two.. lol..)

Fill each half about a teaspoon and sprinkle with paprika. Cover and refrigerate up to 24 hours.

u can give them the normal food wat u eat.if they don't like spice then make less spicy food for them. and if they r fussy of eating then u can add vegs in rice,puris, breads,idlis, dosas etc etc etc ....if u tell me clearly that wat type of food they like then i can help u out.
