It's just from a different part of the animal. And certain pigs might be used strictly for ham, and others strictly for pork.
Also it matters how you cook it...and depends if its marinated, grilled, or broiled.

First 'cause it's from different part of the animal, one is dark meat and the other white and also usually hams are brained for flavor and also juiciness so the brine might have something to do with it as well.

It depends on what part of the pig it comes from. Just like chicken or turkey, breast is white and legs & thighs are dark.
