The colour of Tomato depends on the Chromoplast pigments present in the Tomato Cells, When the Tomato fruit is unripe it is green due to presence of Green Coloured Chloroplast alongwith Colourless Chromoplast ,as the Tomatoes undergo the phase of ripening the colourless chromoplasts are converted to red coloured chromoplasts and the green coloured Chloroplasts are degenerated. In case of Tomato the name of the chromoplast is 'Lycopene'.

Tomatoes are "RED" because it contains a carrotenoid known as "Lycopene". Lycopene is a terpene assembled from 8 isoprene units. The color of lycopene is due to its many conjugated carbon double bonds. Each double bond reduces the energy required for electrons to transition to higher energy states, allowing the molecule to absorb visible light of progressively longer wavelengths. Lycopene absorbs most of the visible spectrum, so it appears red.

In 2005 the ingredient was classified as GRAS (Generally regarded as safe) by the FDA.

Many recent studies clearly document the utility of this carotenoid as a potential treatment of many forms of cancer, especially, prostate.

Sunlight seems to be colourlless or white.But really it is made up of several colours mixed together.Things are different colours.This is because they soak up some of the colours from light and let others bounce off them.A tomato soaks up all colours except red , which bounces back off it,into our eyes.So we see a red tomato.
