In all cases, STILTON!! Stilton has a 1/1 degree with honours in cheeserization. All other cheese types are for-: people who wear white socks, stalkers, nose pickers (and eaters), blokes who pull out their trouser pockets, unzip their flies and say "Does anyone want to see my impression of an elephant?", rabbit suffocators, sponge collectors, people who secretly kick kittens and small children when nobody is looking, gerbil fondlers, mamby pambies who believe that the punk who just mugged a pensioner is a victim of society (given the fact that the mugger had every help and resource in life that the victim never had), people who enjoy “melting” things – YOU KNOW WHO YOU ARE!! Yes, I do like Stilton.

I ADORE pretty much any cheese.
Particularly like pecorino since I had it on the farm that I was staying at where it was made in Tuscany.
Also love Brie, either deep fried in breadcrumbs with some Quince Jelly or similar, or with warm bacon and cranberry sauce in a crusty baguette.
Emmental is nice when used in cooking such as in a feulette with asparagus.
But of course cheddar, the stronger the better is pretty much the king of cheeses. Can be done so many ways with so many things.

I am a great fan of Halloumi it is a mix of cows, sheep and goats milk, made in Greece and it is the only cheese you can fry and grill without it melting. Although I recently discovered Marmite flavoured cheddar at a country fair where i also bought pickle cheese and chili cheese.
