Rosh Hashanah is the beginning of the Jewish new year and it is a tradition to eat apples and honey to symbolize that we should have a "sweet year".
Yom Kippur is considered the "day of atonement" for Jews. It is part of a 10 day process of "chuva" or returning to a more pure state. Rosh Hashannah is a day that Jews ask God for forgiveness for mistakes they made throughout the year. many religious Jews spend the 10 day period between RH and YK asking forgiveness from friends or relatives. In some cases, monetary reparations are in order.
Yom Kippur is often looked at as a somber day, but actually it has traditionally been a joyus day in the sense that somoneone who has asked forgiveness and taken steps to acheive it (through making amends, prayer, and charity) will be granted forgiveness. Acording to tradition, jews are not permited to eat, bathe, have maritial relations or wear leather shoes during the day.

On Yom Kippur people repent. It is the most important and serious holiday of Judaism and is the holiest time of year. Apples and honey is on Rosh Hashana. On Yom Kippur you do not eat or drink for 24 hours starting at sundown tonight. You wear all white and wear no leather at all. You cannot shower or use electricity or engage in any activity (driving to synogogue is an exception.)

Rosh Hashannah is the Jewish new year. It is the holiday where we dip apples in honey, to symbolize "a sweet new year."
Yom Kippur is the holday of judging.
"On Rosh Hashannah it is written, and on Yom Kippur it is sealed." Our names are written in the book of life and on Yom Kippur that book is completed.

in the old testament it was a day they would afflict their souls, gather around the temple and watch a lamb get slaughtered. but since the true Lamb has already made that sacrifice, every day is a day of atonement. Jesus is going over the books in heaven, covering the pages with His blood. which means we should be putting away our sins, and getting right with Him. no need for feasts if the Real has taken place.
