I don't think there are any real countries that begin with the beginning letter of X in english.

In English, none. Xianggang is the Manderin for Hong Kong, Xinjiapo is Chinese for Singapore, and Xussar Iryston is Ossetian for South Ossetia.

Loads of cities (esp. in China) and a couple of provinces of China beginning with an "X" but no countries I'm afraid.

I have not heard of any countries beginning with an 'X'. There is also no UN member country whose name begins with an 'X' http://www.un.org/Overview/unmember.html/.
