I hope your talking about the yolks? The yolks turn to a green colour is a by-product of over cooking. The yolks turn a nice green colour because of the sulphur found in the eggs. This is also the reason why they stink really bad, when rotten.

perfect eggs for pickling are made by putting eggs in a pot of cold watter bring to a rapid boil for 1 minute, shut of the element and let cool in the pot. do not drain when cool enough to peal you may take shells off. perfect every time..

The shells are porous-think spongelike. Other elements can filter thru the cell walls.

dont know ,but if you run them under cold water after hard boiling and leave them soaking in cold water it wont happen
