zest of 1 lime
to make this a wet rub or paste, add 3 T olive oil
I mainly use this for beef. I use it on pork also with a few additions:
2-3 dashes nutmeg
2-3 dashes cinnamon
2 T cumin
2 T poultry seasoning
With those additions to make a wet rub or paste, add 5-6 T olive oil depending on how moist you want it.
