You could use apple sauce, mashed banana, a different kind of fruit puree (find one with the same kind of texture!) or you could use yogurt (low fat if you want).
The point of the oil is to make the cake moist, you just have to replace it with another ingredient that will provide & retain moisture.

You can use applesauce in place of the oil. If you need a cup of oil add a cup of applesauce instead, you can also use pureed prunes in the same way. The cake tastes great and less fat.

yes, if you use a proper substitution like mayonaise(takes the place of oil and eggs), applesauce, sour cream or plain yogurt. The sour cream and yogurt will change the flavor of the cake a bit, but it will still be moist and yummy.

Sure you can take the oil out, just replace it with a lesser amount of orange juice or some apple sauce. Good Luck!
