Well, u really can't sub anything that will give u the results rum will... U can try a vanilla extract with some cloves diffused in it but that still wont get u there really and would be more work then ruining to the store for some rum... BTW... U do realize that all the alcohol is cooked off only leaving the flavor of the rum... n Or u might try just using a simple syrup and berry reduction as a sort of glaze/syrup type finish... But again, rum is really the flavor u r looking for.. Sorry. Hope this helps;)

Leaving out the extract should not make much difference. But vanilla or other flavor you like should work. As has been said before: commercial extracts contain alcohol.

Hey Jade,
I'm behind Browneyed. All extracts are alcohol based! I am surprised that you didn't know this.
You may wish to substitute a bit of Apple Juice or a little fresh lemon juice, it will add that little oomph that the rum would've added.

Don't use any. It just will taste different than the recipe. All the extracts have alcohol in them.
