When I am baking apples with a sponge mixture on top,
( I think it is calles Apple Charlotte)
The sponge in the centre is never cooked.
I have tried all ways to amend this problem such as cooking on a lower heat, drying all the juice from the apples.
The only remedy I can do it to let the other part of the sponge cook them lift the uncooked sponge from the centre before serving.
Please help,

Have you considered making a circle of tin foil and surrounding the outter edges of the pie/bake with it? What I mean is, cover all the parts except the parts that aren't cooking right. You will be able to leave the pie/bake in longer without fear of burning it and the center should cook all the way through then. Just be sure to remove the tin foil about half way through cooking so the rest of it can catch up to the center.

Are you using the correct consistency for the sponge - i.e. 4 oz flour, 4 oz butter, 4 oz sugar and 2 eggs? If not, how about sprinking the apples with cinnamon and then folding them into the sponge mixture and baking them as a cake? It might work. Also, keep the light in your oven on, as opening the door makes a sponge sink.

I had this problem so now i cook the sponge and apple separately

Try a lower temperature over a longer time. If your oven is fan forced the times in recipes wont be accurate.

well..im not really good with this kinda things but problem can be solved with simple science.one way,is to expose more surface area to the heat,which means to cut the 'Thing' you're baking into smaller bits as to fasten the reaction.

you are making it too wet. turn oven temp down, cook slowly and let it dry out.
