Hey Robin,

If you don't want to go through the hassles of making a real Swiss roll, I've got a fake out way of making them that you will love!

Borrow cake pans from your friends - all the same size and shape, you will need about 6 total or you can do this with 2, it will just take longer.

Use your favorite boxed cake mix, prepare as directed.
butter & LIGHTLY flour pans.
Using a ladle, ladle enough cake mix into pan so that it's about the thickness of a pancake. Spread the cake mix evenly around the pan with a spoon or spatula.
Cook for 6-9 minutes in the oven at suggested temperature (about 350) - KEEP CHECKING. They will be done when the sides darken slightly and the middle is firm.

Remove pans, cool slightly and put layer on cake/cookie rack.

When you have 5-8 layers, prepare a frosting (your choice, you may have to thin with heat or a little more water).

Frost each individual layer after you place on the previously frosted layer. When complete, frost the sides.

While this isn't a rolled cake, the appearance is the same when sliced and you can use any combination of frostings (e.g. 1 layer jam, next layer frosting, next layer whipped cream, etc.)

Every time I try to make a Swiss roll cake, I either cook the cake too long or it breaks on me while I am trying to remove it/roll it. I found that this method makes me still look like a star at 1/4 the effort.

Ingredients:-

-1 pkg. (6) frozen patty shells (defrosted)
-1 1/4 c. grated Swiss cheese (or Cheddar)
-3 tsp. chopped chives
-Butter, melted
-Grated Parmesan cheese

Method:-

1) Roll each patty shell out to measure 6 inch square.
2) Sprinkle about 3 tablespoons cheese over top and sprinkle with 1/2 teaspoon chives.
3) Roll up 3 times, jelly roll fashion, tuck in the ends.
4) Place on teflon baking pan, seams down.
5) Brush tops with melted butter and sprinkle generously with grated Parmesan.
6) Bake 400 degrees for 25 minutes (until tops are golden brown).
7) Cut in half with a serrated knife and serve warm.

Serves 6. Can be made ahead and reheated.
Serve with soups or salads.

ENJOY!!

You take your dough (I don't have the recipe, sorry) and lay it out in a flat line (like 15 inches long, 4 inches wide, and 1/4 inch thick) and then you spread your filling along the top of it. Fillings can be anything you want, but a good heavy whipped cream is ideal. When it's coated, simply roll it up and slice off pieces from the end.

Yummy!
