Hey Sonali,
This one can't be beat. Take your favorite veggies and cut them up. Toss with salt, Olive Oil and sliced Garlic. Spread on a baking sheet and throw into an oven for 20/30 minutes (350 f). (Or you can put on the grill)
Take favorite pasta, cook to order, toss with Olive Oil and your baked veggies.
Shred some fresh Basil and Parmesan or Romano Cheese on top.
Simple and healthy!

Greek Pasta
"Flavorful Greek style pasta with garlic, feta cheese, mushrooms and black olives."
INGREDIENTS:
1 pound linguine pasta
3 tomatoes
1/3 cup olive oil
3 cloves garlic, minced
1 pound mushrooms, sliced
1 teaspoon dried oregano
3/4 cup crumbled feta cheese
1 (2 ounce) can sliced black olives, drained
DIRECTIONS:
Bring a large pot of lightly salted water to a boil. Plunge whole tomatoes in water briefly, until skin starts to peel. Remove with a slotted spoon and place in cold water. Add pasta to boiling water and cook for 8 to 10 minutes or until al dente; drain.
While pasta is cooking peel blanched tomatoes and chop.
In a large skillet over medium heat, heat olive oil. Stir in garlic and mushrooms and saute until mushrooms begin to give up their juices. Stir in tomatoes and oregano and cook until tomatoes are tender.
To serve, plate pasta, top with hot tomato sauce and sprinkle with feta and olives.

Fry one clove of garlic and half to one spooon of dried chilli flakes in a little olive oil. Chop a few cherry tomatoes in half and toss in with the garlic and chilli, add a handful of halved stoned black olives. Add a good slug of balsamic vinegar and simmer while you cook whichever type of dried pasta you like. Drain pasta and stir in basil leaves and tomato suace mixture. Serve with freshly grated parmesan.

Ingredient:-
-1 pkg. Italian vegetables
-1 onion, chopped
-Oil
-Parmesan cheese
-Dash of basil
-Salt and pepper
-Cooked pasta
Method:-
1) Saute onion in oil until clear.
2) Add vegetables, cover with water.
3) Simmer, covered, until tender.
4) Pour over pasta.
5) Sprinkle with Parmesan cheese.

so easy....just cook the linguine as it says on the package, while it's cooking, saute red onions, green and red pepper, mushrooms and chopped tomatoes in olive oil and garlic(with a little seasoned salt) until tender. when the pasta is done, toss all together. YUM.
