Most commonly, doctors use math to determine appropriate dosing of medications. Drugs are effective at certain levels based on weight. (Ever read those arcane piles of text in advertisements, or attached to prescription bottles? They say the effective dose per kilo of patient.) Smaller patients require smaller doses for equal effect.
Research studies are all about the math. Drug effectiveness is determined by contrasting reported and detected positive and negative effects of a treatment with either a common treatment or placebo. If there's no difference, then the drug isn't worth a damn.

They don't directly. Forgive me for second-guessing your motives, but if you're wondering why maths is a core subject in terms of grades for getting into med school, that's just because it's all the high schools have to prove that you are able to work with abstract concepts, which is what medicine has lots of. So, in case I'm right and you are planning to get into med school despite mediocre math performance or motivation, look at it as a hoop they want you to jump through because they want to see what kind of mind you have.
