&& here is a recipe that i have tried and that I love:
OREO® Ice Cream Shop Pie
1/2 cup hot fudge dessert topping, divided
1 HONEY MAID Graham Pie Crust (6 oz.)
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed, divided
1-1/4 cups cold milk
2 pkg. (4-serving size each) JELL-O OREO Flavor Instant Pudding & Pie Filling
REMOVE 2 Tbsp. of the fudge topping; set aside. Spoon remaining topping into crust; spread to evenly cover bottom of crust. Top with half of the whipped topping; freeze 10 min.
POUR milk into large bowl. Add dry pudding mixes. Beat with wire whisk 2 min. or until well blended. (Mixture will be thick.) Gently stir in remaining whipped topping. Spoon over whipped topping layer in crust.
FREEZE 4 hours or until firm. Remove pie from freezer 15 min. before serving. Let stand at room temperature to soften slightly. Drizzle with the reserved 2 Tbsp. fudge topping. Store leftover pie in freezer.

You can make all sorts of puddings and boiled custards and tapiocas on the stove top, as well as fruit compotes, poached fruit dishes and such. Steamed puddings like plum pudding can be made on the stove and usually are. There are wonderful dishes like Banana Foster that require only a skillet.
But you can also bake right on the stove top. Use a heavy pot or dutch oven and put an inverted metal pie pan in the bottom to create an airspace between the burner and the baking pan. A loaf or layer cake can be bake over a low to medium flame this way. Cookies might be a problem but there are some no bake cookies you can make as well.

You can make a nice trifle if you can buy some plain, un-iced cake. Cut the cake into cubes (if it's stale cake that's even better.) Make some Jello and cut that into cubes too. Put all the cubes in a glass dish and add some fruit - fresh or canned - cubed again. If you have some, add about a half a cup of sherry. Now make a box or two of vanilla pudding with a little extra milk, and pour it over the cubes; stir and let stand overnight. Serve with whipped cream. Very good and looks great in a clear glass dish!

Mousses, puddings, sabayon (whipped dessert sauce with wine and egg yolks), trifles, chocolate cakes (not baked, just left to set), candied/spiced fruit (try poaching whole small oranges in orange liquer and some sugar and cooking the zest in a syrup), iced souffles (technically not a 'real' souffle, but with the same egg white mixture and stuff, and put in a freezer), chocolates (you can try making them from scratch).

You can make cream pies with a cookie or graham cracker crust. Those crusts don't really have to be baked. A crushed cookie crust would taste better than a graham crust. Try crushing chocolate cookies with melted butter/margarine and press into a pie pan. Mix 8 ounces of cream cheese with one cup of powdered sugar, add a half cup of peanut butter, mix well, add 8 ounces of whipped topping and mix. Put into your pie pan and refrigerate for at least four hours. You can top with shaved chocolate, or peanuts or top with a hot fudge. Another idea is a cream cheese pie. Mix 8 oz. cream cheese until smooth, add 1/3 cup sugar and mix until smooth, add one cup sour cream and 2 tsp. vanilla, mix and then add three cups of whipped topping. Pour into cookie crust or graham crust. Refrigerate. You can top with strawberries or canned cherry pie filling. Refrigerate the pie filling also so it will be cold when you top the pie. I hope you will enjoy these.

Icebox cakes, no bake cookies, stove top rice pudding, other cooked puddings, tapioca, fruit trifles, cream pies with whipped cream topping, and fruit salads.
(All of these are based on the assumption that you have both a functional refrigerator and a stove top or microwave that works.)
