What is the intent behind a game where a dog (female) will lick you heavily then try to rub her head against your hand but move in a circle to apparently escape being petted or scratched, and will softly bite your hand? I'm not sure the breed.

Ha, ha, Andrew. No, nothing so perverse. The dog in question is just friendly. I had no peanut butter on me and hadn't eaten any in many days. And the licking was on the face and hands. She's that way to many people.

I'm trying to see if there's a psychological or dietary explanation.

it sounds like she may have at one time been disciplined by getting hit. she's trying to appease you.
in the pack dogs will nip and lick at the alpha dogs and then turn in circles to avoid getting nipped back or roll over so that their tummy's show.
it's their way of showing that they know your the boss.

since you don't want her nipping to turn more aggressive as she grows, try to discourage this behavior. get her to play fetch or something when she starts doing this.

also do training with her. sit, lay, roll over, shake, stay, heal. teaching her these things will give her confidence. give plenty of treats to start with. and tons of affection.

I think she's just being friendly and trying to get your attention. I wouldn't think too much of it unless she has other problems, too, then you might want to take her to a vet. She sounds like a nice dog :)
