No package directions--bought it from pasta place at local farmers' market. Do I need to thaw it first? If so, how (microwave, fridge, countertop at room temp?) and for how long? Either way, do I salt the water?

Planning to pair it with nice pesto from a gourmet shop.

ohh! do not thaw it first. Drop those babies in boiling water with a bit of salt frozen solid. they should sink to the bottom, when they rise to the top take one out cut it in half and touch the stuff inside, if it feels cool let it go for a couple more mins, if its warn eat it to judge doneness. tortellini casing (the dough) should be easy to chew.

Cheese Filled Tortellini

(1) Bring a lot of water to boil. Salt it.
(2) Dump frozen tortellini in it. Stir occasionally.
(3) Keep on high heat until tortellini float to top.
(4) Cook on low boil for another 5-10 minutes, stirring occasionally.
(5) Test one for doneness.

Add frozen to salted water at full boil,return to boil,cook 4-5 minutes(usually 4). Sounds delicious.

usually when they start to rise and float in the water is a good indicator that they are done. Don't thaw them just put them in some boiling salted water.

If it's uncooked pasta just treat it as you would any other pasta...cook it till it's al dente...you could add a little salt to the water and a tablespoon of cooking oil.
