what are some easy meals i can make at home. I am home alone and don't have a car to go anywhere and don't have that many choices for food but i have alot of ingredients?? so what could i make

#1 - pita pizza: wholewheate pita, tomato sauce, toppings of choice. Grill until cheese melts, in oven, etc. yummy and fast.
#2 -soup! Get creative with the ingredients
#3 - casserole.

Quick Sesame Chicken (who doesn't have about 10 mins?)

2 whole boneless chicken breasts
4 teaspoons vegetable oil
4 scallions, tops and bottoms, cut into small slices
1 tablespoon sesame seeds
4 tablespoons vinegar, wine or lemon juice
Salt and pepper, to taste

Mix the oil and sliced onions in a microwave-safe cooking dish. Cover with wax paper and cook on HIGH for 2 to 3 minutes until soft. Divide, wash and dry the chicken halves. After the onions have cooked, remove from microwave and add the seeds, liquid of choice, and salt and pepper. Mix well. Roll each chicken breast in the mixture and place in the mixture. Cover with the wax paper and cook on HIGH for 3 minutes. Remove from oven and turn the chicken over once. Cook for an additional 3 to 4 minutes.

(Also with a quick rice in a boil bag and some frozen veggies in the micro steamer on high and the whole meal is quick and healthy for the whole family)

I like to make Parmesan-crusted Tilapia, which is a recipe I found in Rachael Ray's magazine. It is easy and doesn't require much.

3/4 cup freshly grated Parmesan cheese
2 teaspooons paprika
1 tablespoon chopped flat-leaf parsley
4 tilapia fillets (about 1 pound total)
1 lemon, cut into wedges
Extra-virgin olive oil, for drizzling
Salt and freshly ground pepper

Preheat oven to 400. In a shallow dish, combine parmesan cheese, paprika, and parsley. Season with salt and pepper. Drizzle fish with olive oil and coat in cheese mixture. Place on a foil-lined baking sheet and bake for 10-12 minutes. Serve with lemon.

20-Minute Peking Duck:

Here's a simplified--and delicious--Peking duck with flour tortillas standing in for traditional thin pancakes.

2 teaspoons dark sesame oil
2 (8-ounce) packages boneless duck breast halves, thawed and skinned
1/3 cup hoisin sauce
1/2 teaspoon grated orange rind
2 tablespoons orange juice
2 teaspoons Sriracha (hot chile sauce, such as Huy Fong)
4 (6-inch) flour tortillas
1/2 cucumber, peeled, halved lengthwise, seeded, and cut lengthwise into 8 strips
2 green onion tops, cut into thin strips
2 teaspoons sesame seeds

Heat oil in a large nonstick skillet over medium-high heat. Add duck to pan; cook 2 minutes on each side. Reduce heat to medium; cover and cook an additional 3 minutes on each side or until done. Cut duck diagonally across grain into thin slices.

Combine hoisin, orange rind, orange juice, and Sriracha. Heat tortillas according to package directions. Spread about 2 tablespoons hoisin mixture down center of each tortilla. Top each tortilla with 1/4 of duck, 2 cucumber strips, 1/4 of onions, and 1/2 teaspoon sesame seeds; roll up.

Yield: 4 servings (serving size: 1 filled tortilla)

5 minute chicken BLT Salad:
8 c torn romaine lettuce
3 c sliced chicken breast (@3/4 lb)
2 c cherry tomatoes, halved
1/2 c sliced red onion
1 c sharp Cheddar, crumbled, divided
1/4 c Ranch with Bacon dressing
2 slices bacon, crumbled

Toss lettuce, chicken, tomatoes, onion and 1/2 c of the cheese in a large bowl. Add dressing; mix lightly. Top with remaining 1/2 c cheese and bacon.

5 minute Shrimp and Pea Salad:
1 lb frozen cooked large cleaned peeled shrimp (21-30)
2 c frozen peas
6 c Boston lettuce leaves
1/2 c thinly sliced red onion
1/4 c ranch dressing

Place shrimp and peas in colander; rinse under hot water until thawed. Drain well. Place in large bowl; set aside. Arrange lettuce leaves on 4 plates to resemble cups. Add onions and dressing to shrimp mixture; toss lightly. Spoon into lettuce cups.

Chicken Fingers on a stick:

4 boneless skinless chicken breast halves, pounded to 1/2-3/4 in thick
salt & pepper
24 (10in) bamboo skewers, soaked in water for 30 min.
3 TBS oil
2 TBS barbecue sauce (or spicy mustard)
1 1/4 c bread crumbs

Cut each chicken piece lengthwise into 1/2 inch strips and sprinkle with s&p. Fold the strip slightly and weave them onto skewers. Prepare grill, close lid and heat until hot. In a small bowl, stir together the oil and the barbecue sauce. Spread the bread crumbs on a sheet of wax paper. Lightly brush the sauce moxture over the chicken strips and then roll them in bread crumbs. Grill until no longer pink inside, about 2-4 min. per side (on gas grill) Serve with the dipping sauce of your choice.

When I am in a hurry I do a pasta bake. Just bow tie pasta and meat cooked in onion and garlic and you throw them in a caserole dish and top with spaghetti sauce and top with mozzarella and provolone cheese. I do a lemon baked chicken all the time too. We live in the south so we do a lot of country style foods like corn pudding, green beans with ham hocks, country fried steak.

home made hamburgers- in a large mixing bowl add mince, 1 chopped onion, 2 carrots grated a sprinkle of curry powder and a sprinkle of chicken stock and one egg mix thro make balls and cook in hot oiled pan!

boil speghetti/pasta. take you favorite veges, stir in cooked chicken cubes. add sauce or cream. stir all together , garnish with cheese
