Add to water in your ice trays - great in Pimms! Mint and most herbs will keep well in ice pretty indefinitely.

It is good to mix with hamburger. For one pound of ground beef add one small onion diced or use green onions. Add a handful each of chopped fresh parsley and chopped fresh mint. Throw in a few minced garlic cloves and salt and pepper to taste. I use this to make mini hamburger patties for a snack.
Also good with a tabouli salad. That uses mint too.
Can be added to a cucumber yogurt sauce. Seed and shred a cucumber, add plain yogurt a TBS. chopped mint and some garlic. Salt and pepper it to taste.
I also make a yummy salad. Coarsely cut up half a head of cabbage. Throw in fresh chopped mint, fresh parsley, and garlic. Mix a dressing of 3 TBS. olive oil, 3 TBS lemon juice, 1tsp, salt and 1 heaping tsp. dried oregano. Mix all and serve.

Rachel Ray always says that if you have extra herbs, to throw them in your salads. They add a lot of flavor and they are really good for you. If you're looking for something soothing, but not food related, you could bring a cup of water to a boil, add a handful of mint, pour it in a bowl, and add 2 cups of warm tap water. Put your head over the bowl and cover with a towel. Then just sit and enjoy your steam. It's really great for your skin, and it's the perfect thing to calm you after a stressful day. Other than that, mint is good in water and lemonade.

Oh, I've always grown fresh mint, I love the scent.
I put a few sprigs in when boiling potatoes, it adds a bit of zest or you can use it to make mint sauce, chop up the leaves into tiny pieces and mix with a little bit of vineger, put on chops..... beautiful.

Dont panic! you dont have to use it all at once! mint actually freezes really well, just chop it up and put in a freezer bag, when you need some just add straight from the bag to your cooking, however much you like! also you can make mint tea, use it with lamb, new potatoes etc

Chop up about 1/2 cup and add to a box of brownie mix (mixed according to directions on box) or a chocolate cake mix - voila... mint chocolate brownies/cake. Top with frosting (chocolate or vanilla), decorate with a couple of sprigs... take it to someone's house for dessert, they'll think you're a Top Chef.

Also... ooh, baby... Mojitos!! This is a Cuban alcoholic beverage that's very simple and easy... recipe here: http://www.drinksmixer.com/drink582.html
