It is enchilado not enchilada cheese, but I don't know if that matters.

QUESO-ENCHILADO -IT'S A COUSIN TO PEPPER JACK ! EXCEPT BEFORE IT'S FORMED / MOLDED RED CHILE PASTE IS FOLDED (NOT MIXED ) INTO THE CHEESE (USUALLY MONTERY-JACK ) THEN BASTED W/THE CHILE . YOU CAN DO WITH OUT ,IT JUST ADD AN ADECUTE AMOUNT OF FRESHY BLENDED SAUCE (LIKE YOU WOULD MAKE FOR ENCHILADAS ) UNLESS YOUR USING IT FOR A GARNISH , THEN I GUESS ANYONE WHO KNOWS ! WILL BE LOOKING FOR THE MARBLING IN THE CHEEEEEEEEESE !!

Sounds like a typo to me. I'd use asadero, or Monterrey jack, with about 30% Cheddar mixed in.
