There are many kinds of blood chokes. Blood chokes restrict blood flow to the head/brain at the neck to render your opponent unconcious, or if held long enough, dead. Blood chokes are safer than air chokes become they do not damage any tissue, once they are released the blood returns. Air chokes constrict the trachea which is fragile and brittle, if the trachea is crushed it can restrict breathing after the choke is released. Blood chokes actually work faster as well. A properly applied blood choke can put your opponent out in SECONDS, where as an air choke can take several MINUTES, heres Joe Rogan demonstrating:

Some blood chokes rely on a gi or shirt and other are no-gi techniques. One of the most popular chokes is a Rear Naked Choke (it's a no-gi technique)

Well that would be quite the ethical conflict. I personally know that there are many efficient NON blood solutions. As Witnesses we know the harm BTs can cause. More than likely the Doctor would, after giving his opinion, let the patient decide if they wish to seek a second opinion. Honestly enough I would want to first think of the oaths involved. Do no harm. Knowing as we do the complications from BTs, we know them to often be VERY harmful. In good Christian conscience I doubt a Witness/Physician could give a BT. It is reminiscent of when a Doctor is asked to preform an abortion. Some feel OK doing it. As Christians we know that life is life, even if it is an infant. If a patient wants something we cannot in good conscience provide they could always find someone else to go to.

applying a blood choke means locking the opponents neck in a restrictive manner to cut the blood flow from both the Perotid and Carotid arteries in the neck as philip has said.
but with the links he's also provided, it should help fairly well.

umm.. there is a link up there, but he didn't explain how to use it at all so i'll try to attempt to explain in words. Actually i haven't used it ever in my life, but my brother has used it against me plenty of times for me to know how it works. (oh and i almost did black out in less than 10 secs)
the way he does it is, he comes up from behind and puts his arm around my neck. then he places my air pipe(?) in the center of his arm (the opposite side of the elbow, that bends) and he brings his arm together like he's flexing his arms only horizontally. what happens is that the muscles of your arm, from both sides, will cut off the circulation in the neck of the other person. i'm quite sure same method applies to the leg one as well, although i haven't seen the clips at all^.
