Ingredients:
6 ripe figs
6 slices prosciuitto or Parma ham
A good handful green or purple basil
6 small balls buffalo mozzarella, torn
For the Honey and Lemon Juice Dressing:
1 tablespoon good honey
6 tablespoons extra virgin olive oil
3 tablespoons lemon juice
Sea salt and freshly ground black pepper
Preparation:
Cut a criss-cross in the figs, but not quite to the bottom, and then, using your thumb and forefinger, squeeze the base of the fig to reveal the inside. Place the figs on a large plate and weave around I piece of prosciutto or Palma ham around each fig. Add the ripped up basil and the buffalo mozzarella. Drizzle over the honey, making sure each fig has some in the middle, then drizzle the olive oil, lemon juice, and salt and pepper. Or: Mix all the dressing ingredients together in a bowl and season, to taste, then drizzle everything with the honey and lemon juice dressing.

Fig Jam... lovely. Because figs are so sweet, less sugar than normal (Its usually 50/50) and add pectin or lemon juice to make it set, boil up the mixture till a drop of it quickly forms a skin on a spoon - takes about an hour.
I think fresh figs are pure heaven - shame not to eat them fresh. When I cant get them fresh I eat dried figs. Drying them yourself is tricky but can be achieved with a proprietry dryer.
Fig and Banana cake is superb...!! Cut the figs up small though, and use slightly overripe bananas, with a standard sponge mixture. Good luck - and can I come to tea?

Cut the figs in half and put in a dish with a splash of orange juice. Drizzle some runny honey over the figs, seed side up. Bake in the oven at 200 degrees for 10 minutes. The figs will be glazed and just slightly firmer. Serve hot with single cream.

Straight off the tree ... why spoil something so delicious?
Although there are various recipes for poaching them with honey, orange juice, stuffing them with marzipan - but if you like fresh figs don't tart them up with things that you can do to tinned figs or to any other kind of fruit.

If possible, straight off the tree. Wait until they are so ripe they drop. Suck out the centre - then you will know why they are seen as erotic. If you have to buy them in a cold country - split, wrap in parma ham, drizzle with balsamic vinegar
