Parmesan can be fresh or dry, and it's usually sold in a tube. Ricotta is dry, but not usually powdery, and it's sold in a tub. (That final "e" in tub/tube makes a lot of difference in this particular answer.)
I usually end the top layer of lasagna with sauce and parmesan. The cheese melts and forms a bubbly top that's delicious. I use the ricotta in the other layers, and it blends with the meat sauce for a good consistency.

It's parmesan..you know the stuff you put on top of your spaghetti. Thats it. Ricotta, is wet and clumpy (just like cottage cheese). Parmesan is not wet its dryish and crumbly , and it doesnt dry up, in the oven. It's NOT sold in tubs either. You can buy it in a bag, like the other cheeses or in a green can (which is the spaghetti thing again). It melts just like all the other cheeses. *Ok, now i'm hungry!* debs

ricotta is the cheese in lasagna that kinda looks like cottage cheese it shouldn't be dry though. Parmesan is dry but usually sprinkled on top.

Parmesan is hard and crumbly when it comes in a container
Mozzarella is firm but melts stretchy (like on pizza)
Regatta looks like cottage cheese but very soft curds

Parmesan is one Ricatta is another.. it doesn't dry up, you can buy parmesan in tubs and it is like nearly dryed playdough, just moist enough to grate..or you can buy it in powdered form in jars.. fresh grated is best

You are probably talking about Ricotta.
I like to add shredded mozzarella cheese to the mix, that way my cheese doesn't dry out.

Ricotta cheese or you can substitute cottage cheese. Either way you have to add mozzerella to it as well as a couple of eggs.
