Peel some waxy potatoes.
Grate them on a coarse veg. grater, or on the coarse grater of a food processor.
Put the grated potato into a clean cloth kitchen towel, and wring it out, so you extract as much water as possible.
Take a frying pan, of the dimension you want your giant hash brown, and melt a knob of butter in it.
When it is sizzling, but not browning, put your potato into the pan, and spread it around, pushing it together with the back of a spoon.
Cook on a medium heat.
When it is clinging together, slide it onto a plate, and put another knob of butter into the pan, melt it as before, and then slide the uncooked side of your potato into the pan, and continue to cook until golden, and cooked through.
You can add all sorts of other ingredients, grated onion, beaten egg etc, but the basic "hash brown" or Potato Rosti is the basis of anything else you fancy adding.

It depends how big you want to go. I make big ones like pancake size. I shread a large potato, If you don't like the skin, peel it first. Then heat about 4 tbs of olive oil or vegetable oil over med-high heat in a large non-stick frying pan. Don't let it heat too much, sprinkle the potato directly onto the pan, in a circular pattern of course. You will layer the remaining potato over the other. Once the hash bown frees up ( that you can move it around in a pan ), about maybe 5min, flip it over like a pancake, let it cook for about 5 to 7 min depending on your stove of course, checking to make sure it doesn't burn, then and Voila! pancake hash browns.

When I prepared this giant hash brown for my father, who considers himself somewhat of a potato guru, he couldn’t stop commenting on the superb flavor and the crunchiness. It made his day! Don’t leave out any ingredients and you’ll find the taste is worth the extra time.
