Tony Chachere's is the Louisiana standby- everything has Chachere's in it. It is very good with pork- I use it on a pork roast. I'd recommend getting the low-salt (pork is salty enough on its own), extra spicy kind.

Cajun Pork Chop Recipe
Ingredients:
4 Boneless pork chops, cut 1/2 inch thick
1 tb Paprika (Hungarian is Best)
1 ts Seasoned salt
1 ts Rubbed sage
1/2 ts Cayenne pepper
1/2 ts Black pepper
1/2 ts Garlic powder
2 tb Butter
Directions:
Trim fat from chops as needed, pat dry. Combine seasonings; coat chops with seasoning mixture on both sides. Heat butter over high heat just until it starts to brown. Put chops in pan, reduce heat to medium. Fry on both sides until dark brown, about 10-12 minutes. Makes 4 servings.

1. Rub both sides of pork chops with Cajun seasoning. Refrigerate covered
1 hour to marinate.
2. In large skillet, heat 1 T oil over medium-high heat. Add onions; over
medium heat, saute' until well-browned and soft, about 15 minutes. Add
sauce; mix. Over low heat, cook 5 minutes. Remove to bowl; keep warm.
3. In same skillet, heat remaining 1 T oil over medium-high heat. Add
pork chopes; cook until borwned and just cook throuhg, about 3 minutes each
side. Serve topped with onion mixture.
