Love bean burritos - I'm vegetairan. I love Taco Bell, but when I make them at home I add chopped iceberg lettuce for texture (crunch). Also shredded cheddar cheese and salsa. You can even throw in some rice or serve it on the side.

I usually use pinto beans. I cook them and serve as soup beans and then we reheat the leftovers on another night and have browned ground beef or cooked chicken, some cooked rice, tomatoes, lettuce, sour cream, shredded cheese. salsa, onions and whatever else you make like. We just make it like a burrito bar and everyone fixes their own to suit themselves.

How about pieces of avocado, not mushed up like guacamole but just pieces here and there. Plus some chopped tomatoes and lettuce and jalapeno pepper (without seeds). Sounds great to me.

Rice. Maybe some sauteed garlic and onion and jalapeno. But definitely rice, and a dash of vinegar.
