I want to cook these chops but they've been out of the freezer and in the refrigerator for a week.

I'd throw them out. Why take a chance at getting food poisoning?

When you buy pork chops, freeze them for no more than a week. Defrost them, in the fridgerator, over night so you can use them the next day. They should be ok for 3-5 days...after that give them the ''SNIFF'' test.

WHEN IN DOUBT, THROW IT OUT!!!

Here's a really good reicpe for your pork chops

This is incredibly easy and melt-in-your-mouth delicious!

Gravy Baked Pork Chops
Serves 4

4 (1-1/4 inch thick) Pork Chops
1/2 Tsp Salt
1/4 Tsp Freshly Ground Black Pepper
1 Tbsp Unsalted Butter
3/4 Cup 2% Milk
1/4 Cup Water
1 (10-3/4 oz can) Cream of Mushroom Soup

Instructions:
Preheat the oven to 350º F.

Season pork chops with salt and pepper to taste. Melt the butter in a large skillet over medium high heat. Sauté the pork chops in the butter for about 5 minutes per side.

In a separate medium bowl, combine the milk, water and soup. Place the pork chops in a 9x13 inch baking dish and pour the soup mixture over the chops.

Bake for 45 minutes. Serve immediately.

I'd say if you cook it within a day or two you'll be fine. Dry rub or marinade it tonight and cook it tomorrow. There is nothing like a good pork shoulder roast (esp. if there's cracklings!!) Here is the way my mother always makes hers and we just love it. Garlic Infused Pork Shoulder Roast Score the pork skin with a very sharp knife. I should be cut in a "tic-tac-toe" pattern. This will help release the fat and act as a self basting agent. Sprinkle soy sauce all over the roast. Soy sauce is great with this recipe. It adds to the caramel roasted color too. Sprinkle your dry seasonings over the roast (garlic & onion powder, salt & pepper). Roast at 400 for the first 20 min. and then turn down the heat to 350 and then finish baking (check online or refer to your cookbooks for exact cooking times per pound). Enjoy.

In all honesty, I wouldn't cook them. Pork can get nasty after only 3 days in the fridge.

If they smell bad throw them out, otherwise they're OK, that's what noses are for!
