grren tomatoe and onion casorole
Ingredients:
2 tablespoon all-purpose flour
2 tablespoon packed brown sugar
sugar
1/2 teaspoon salt
1/2 teaspoon dry mustard
1/4 teaspoon pepper
1/4 teaspoon cloves
4 green tomatoes
1 large onion, thinly sliced
2 tablespoon butter

Instructions:
In a small bowl, stir together flour, sugar, salt, mustard, pepper and cloves; set aside. Cut out stem ends and slice tomatoes 1/4 inch thick. In greased 8 cup casserole dish, arrange tomatoes and onion in alternate layers, starting and ending with tomatoes and sprinkling each layer with about 1 tbs. of the four mixture. Dot with butter; cover and bake in 350 oven for 45 minutes. Uncover and stir; bake for about 30 minutes longer or until onions are tender.

green tomatoe pie
Ingredients:
4 or 5 really green tomatoes (2 1/2 cups coarsely grated)
pastry for an 8 -inch 2-crust pie
1 1/2 cups brown sugar
3 tablespoons flour
rind of 1 lemon, grated finely
6 tablespoons lemon juice
1/2 cup golden raisins
1/4 teaspoon salt
1/4 teaspoon allspice
1/4 cup minced candied ginger

Instructions:
Put tomatoes through a coarse grater or a food processor's large shredder. Put in a colander and let drain overnight.

Prepare double pie crust. Line 8-inch pie pan with half. Roll out second half and set aside. Mix remaining ingredients with tomatoes. Place in pie shell and cover with top crust. Prick holes in crust. Bake in 450 degree oven for 10 minutes. Reduce heat to 350 degrees and bake 40 minutes longer or until golden brown

green tomatoe salsa
Ingredients:
1 poblano chili
2 pounds (about 6 medium) green tomatoes, seeded and finely chopped
1 small or 1/2 large Vidalia or other sweet onion, finely chopped
4 scallions, sliced thinly crosswise
2 tablespoons freshly squeezed lime juice (about 2 limes)
2 tablespoon extra-virgin olive oil
1/2 cup finely chopped fresh cilantro
coarse salt and freshly ground pepper

Instructions:
Roast chili directly on a gas-stove burner over high heat, or under the broiler, turning as each side blackens. Transfer to a bowl; cover with plastic. Let stand until cool enough to handle. Peel off skin; discard stem and seeds. Finely chop chili, and place in a medium bowl.

Add tomatoes, onion, cucumbers, scallions, lime juice, oil and cilantro. Stir. Season with salt and pepper; let stand 30 minutes. Store in refrigerator up to 3 days.

Ingredients:
2 tablespoon butter
1 medium onion, very finely chopped
1 clove garlic, finely chopped
1 10 ounce can mein green tomatoes, drained
1 cup green chilies, chopped and peeled
12 sprigs of fresh coriander, chopped

freshly ground pepper
1/2 pound cream cheese
3/4 cup heavy cream

Instructions:
Heat the butter in a skillet, add the onions and garlic, and sauté until the onion is tender. Add the tomatoes, chilies, coriander, and salt and pepper to taste. Simmer very gently for 10 minutes, uncovered. Add the cheese; when it begins to melt, add the cream; and cook just long enough to heat through.

Ingredients:
1 peck (12 pounds) green tomatoes
8 large onions
10 green bell peppers
3 tablespoons salt
6 hot peppers (chopped)
1 quart vinegar
1 tablespoon allspice
1/4 teaspoon cloves
3 tablespoons dry mustard
few bay leaves
1 3/4 cups sugar
cup horseradish (optional)

Instructions:
CHOP tomatoes, onions and peppers together and cover with the salt; let stand overnight. Drain, add the hot peppers, vinegar, spices (tied in cheesecloth bag) and sugar; allow to boil slowly until tender (about 15 minutes). Add horseradish. Pack into sterilized Kerr jars to within inch of top. Put on cap, screw band FIRMLY TIGHT. Process in Boiling Water Bath 10 minutes.

OH YES! Green Tomato pickles for one and you can find many recipes for them on the net. But my fav is the good ole fried green tomato.
Make an egg/milk mixture...dip the sliced tomato into that and then dredge in a mix of all purpose flour/corn meal (equal ingredients)...season with some Cajun seasoning or just plain salt and black pepper. Heat a good non-stick skillet or cast-iron skillet with oil of your choice. Cook on medium heat so as not to burn (flour tends to burn quickly).

Fried Green Tomatoes:

Slice a green tomato, dip in egg and lour and fry until golden brown. Salt and pepper to taste.

Green tomato pie:
CRUST (recipe makes one double crust):

2 1/2 cups white flour
2 tbsp. sugar
1/4 tsp. salt
1/2 cup cold butter, broken into small pieces
5 tbsp. cold vegetable shortening
8 tbsp. ice water


Measure the flour, sugar and salt together. Stir to combine.

Add the chilled butter pieces and shortening to the bowl. Cut them in with a pastry cutter or knife. Don't over mix them.

Add the ice water. Mix until the dough holds together (add a bit more water, if necessary).

Turn the dough onto a lightly floured surface, knead it together, then divide in half.

Flatten each half into a disk, wrap in saran wrap and chill for at least half an hour.

Roll out one of the disks on a lightly floured surface until you have a circle that's about 12 inches in diameter.

Put the circle in a 9" pie plate, trimming any extra dough from the edges with a sharp knife (parents only). Return it to the refrigerator until you are ready to make the pie.


Add filling (see below)
Roll out the second ball of dough and cover top. Use a fork or your fingers to pinch the edges together. cut a couple slits in the top.

FILLING

1/3 to 2/3 cup sugar
1/4 cup all-purpose flour
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
Pinch of salt
8 medium sized green tomatoes (about 6-7 cups total)
2 tablespoons margarine


Heat oven to 425 degrees.

Slice and chop the green tomatoes. Try to keep the size of the peices even.

Mix sugar, flour, nutmeg, cinnamon, and salt in large bowl.

Stir in tomatoes.

Pour into pastry-lined pie plate.

Dot with margarine.

Cover with top crust and seal the edges. Cut slits in the top.

OPTIONAL: Cover edge with 3-inch strip of aluminum foil to prevent too much browning.

Remove foil during last 15 minutes of baking.

Bake 40 to 50 minutes or until crust is brown and juice begins to bubble through slits in crust.

Green Tomatoe Pie...the sour green tomatoes cook into somithing akin to rhubarb.

green tomato chow chow (pickles) they are an acquired taste, those that like em, really like em. my mom makes them all the time, i don't like them. I'm not sure of the recipe, but they STINK when they are cooking!!
or , another thing my mom makes, green tomato mincemeat. it's yucky, too, in my opinion.

FRIED GREEN TOMATOES

slice them into 1/2 inch thick slices
dip in beaten egg
roll in italian bread crumbs OR PLAIN (YOUR CHOICE)
fry in oil
serve with horseradish sauce or ranch dressing for a dip
