Once you slice an apple oxygen hits the flesh and it starts to oxidize, or turn brown. To keep your culinary critic from sending the fruit course back, all you need to do is give it a hit of acidulated water.

Acidulated water is just a fancy name for H2O spiked with a harmless edible acid such as lemon or lime juice. To make the solution, pour a quart of water into a clean mist bottle and add two tablespoons of lemon or lime juice to it (bottled is fine). After slicing the apples just give them a quick spritz with the mixture and pack them up. Then you can stash the mister in the fridge for another day. It works for peaches, pears, and avocados as well.

Lemon juice, citric acid, or orange juice. I use orange juice if I am putting apples in a fruit salad. Lemon juice the rest of the time. They now sell lemon just in a spray bottle, so if you are making a fruit tray you can spray the apples with the lemon juice so the color stays.

Oxidation cannot be stopped once the center of the apple hits the air. There are products like Fruit Fresh that help a little bit, but do you really want chemicals on your apple?

Greetings!

As you slice them, let them drop into a bowl of cold water with a spoon of white vinegar. The acid from the vinegar will react to the apple and prevent it from browning.

Good Luck
PS I love apple Pie!

Best thing is to blanch them immediately at 92 degree Celsius for 2-3 minutes, and dip it in ascorbic acid solution. KMS can also be used as browning inhibitor. Blanching is important to deactivate poly-phenol oxidase responsible for browning. (as they are heat labile)
